2018 Black Magic Woman

WINEMAKER - Emma Walker GRAPE VARIETY - 100% Cabernet Sauvignon REGION - 100% Clare Valley COLOUR  - Deep crimson, bright and youthful but with black depths (like my heart). BOUQUET  - Mint, menthol and blackcurrant all wrapped up in fancy pants subtle French oak – ooh la la! The use of first and second fill sexy French oak barrels may make the bean counters cringe but pays dividends in the glass. PALATE - Soft, fleshy and full with embracing lingering tannins this is a wine of weight and substance but with balance as it’s middle name. Classic Clare Valley Cabernet at it’s best - very early hints of WOW reflect just how good the 2018 vintage was. Consider flavours of Christmas cake, cassia bark and soft voluptuous berries melded with subtle hint of cedar from high end oak. A wine that is in its infancy but will develop amazing secondary characters. GENERAL -  A site specific wine, drawn from grower blocks where the vines are treated with the respect deserving of their status as elder statesmen of the region. Dry grown parcels, left to take their sweet time on the vine, from a wonderfully warm but consistent season contribute that intensity in the glass. We then allow these parcels two years in barrel affording the wines the perfect amount of time in oak to really come into their own, tannins become velvety and reinforce the wine’s balance. SERVE WITH - A finely crafted wine like this deserves a classic – lamb is where it’s at for this crew. Roasted simply with a side of homemade plum sauce or black olive tapenade and buttered baby potatoes. Easily a cellaring proposition, we expect to see our bewitching minx improve over the next 5-15 years. ALCOHOL - 14.7% pH - 3.43 TA - 7.03

2018 Nirvana

Winemaker - Emma Walker Grape Variety - 100% Shiraz Region - 100% Clare Valley Colour - Blackest dark red Bouquet - Best when given some air, the aromatics of this wine build with time in the glass. Initial hits of pretty, spiced oak give way to dense plum fruit and white pepper with hints of violets. Forest berries are peeking out from behind that hedge of lovely oak spice and will develop further as the wine gets used to being in bottle. Palate - Indulged with 24 months maturation in oak, the powerful nature of this release is yet to be fully tamed. Time will bring great rewards although we are already seeing a restrained elegance in what is actually a very rich, brooding wine. There is an immediate intensity to this wine driven by primary fruit characters of darkest berries & plums continue in-line from the bouquet. A rich & full front to back palate weight is luxurious but hides a beautifully formed, balanced structure. There is great weight to this baby – leaving lingering spiced plum fruit and gentle savoury notes on the long finish. General - It is typical for our Nirvana to rest in barrel for up to 2 years; the sheer power of this vintage dictated the full 2 years in the barrel store to allow the angular components the opportunity to integrate. We maintain an attitude of respect and deference with regards to use of oak in the cellar – as a reserve release maturation in 30% new oak is a measured indulgence. Our central goal for all our winemaking is the attainment of great balance in our wines – crafting releases that reflect poise, power and a gentle hand to allow the beauty of our fruit to shine through. Serve With - Serve well aired with aged beef fillet or a sharp matured cheddar – this is a big wine, deserving of the best but should ideally be cracked after few more years in the bottle. (8-10 years recommended). Alcohol - 15.0% pH - 3.51 TA - 6.75g/L

2020 Superstition

Grape Variety - 100% Riesling Region - 100% Estate Grown, Shankly Vineyard, Watervale, Clare Valley Colour - Pale straw with the slightest hint of a white/green hue. Bouquet - It’s alluring blossom and subtle lemon juice but with just enough minerally acids to promise a masterpiece with years ahead of it. Palate - Fresh lime pith, almost a sorbet zing, with subtle chalky acids. This wine shows hints of elderflower with a powerful underlying depth, finishing with a racey hint of fleshy texture. She’s zesty, seductively layered and unarguably sophisticated! General - This wine is languishly captivating. It shows length and complexity that continues for some time and will only contonue to improve with age. In its youth it has a pent up energy with a squeaky clean minerality that will unfold in the years to come. It will cellar for years (if you can wait that long!) 100% free run juice, hand-picked grapes from old vines. No added acid or finings. Gently pressed and fermented slowly in controlled conditions to maintain the fruit purity. As always; a truly exceptional expression of Clare Valley Riesling from this very special site. Serve With - The schisty minerals, textural weight and thrust of herbiness would see this stunning wine pair perfectly with pan roasted swordfish with lemon and caperberries sauce. A wine with potential to cellar 10-15 years and likely to show at its best after 12 months in bottle. Alcohol - 11.8% pH - 2.77 TA - 8.45g/L Residual Sugar - <1.0g/L
