CHARDONNAY / 2016

2016 HARVEST A small parcel of carefully tended vines of Chardonnay fruit was harvested from the Tolley Vineyard in Woodside on the 28th February 2016. WINEMAKING Hand picked grapes were gently whole bunch pressed to seasoned French oak barrels using free-run juice only. A high solids, wild fermentation followed, giving the wine texture and complexity. The wine underwent Malo-lactic fermentation with weekly batonage (stirring) for approximately 6 months before bottling. CHARACTER A complex bouquet with stone fruit aromas. Using quality French oak (10% new), layers of texture persist with white peach flavours, cashew and a hint of citrus acidity. A full bodied style with subtle and restrained oak. PERFECTUS PINOT NOIR / 2019

PERFECTUS BACKGROUND At Simon Tolley Wines, we are firm believers that great wine is made in the vineyard. Each season, no stone is left unturned to grow the best fruit that we can grow. Where particular seasons provide excellent growing conditions, special fruit characters and outstanding wine expressions, Simon puts aside this wine into his premium range of wines called “Perfectus”. HARVEST A small parcel of carefully tended vines of Pinot Noir (MV6) fruit was harvested by hand from the Lodge Block in Woodside on the 8th March 2019. WINEMAKING A small parcel of carefully selected Pinot Noir grapes was selected and harvested by hand in the cool of the morning. Approximately 3 tonnes was lightly pressed and fermented on skins for approximately 14 days. After primary fermentation the juice was transferred to barrel and went through malolactic fermentation in French barriques over a 9 month period. CHARACTER A beautiful bouquet with raspberry and blue berry fruit aromas. Using quality French oak (20% new), subtle layers of texture linger on the palate with persisting cherry flavours. A medium-full bodied style with subtle and restrained oak. RELEASE DATE 20/01/20 ALCOHOL 13.5% alc/vol SCREW CAP Ensuring freshness and longevity. PERFECTUS SHIRAZ / 2017

BACKGROUND At Simon Tolley Wines, we are firm believers that great wine is made in the vineyard. Each season, no stone is left unturned to grow the best fruit that we can grow. Where particular seasons provide excellent growing conditions, special fruit characters and outstanding wine expressions, Simon puts aside this wine into his premium range of wines called “Perfectus”. HARVEST A small parcel of carefully tended vines of Shiraz (1654) by Darren White was harvested from his vineyard at Harrogate on the 8th April 2017. Due to a cooler summer his grapes were chosen and blended to add dark fruit characters and spice. WINEMAKING Approx. 4 tonnes of Shiraz grapes were harvested in the cool of the morning. The fruit was lightly pressed and fermented on skins for approximately 18 days. After primary fermentation the juice was transferred to barrel and went through malolactic fermentation in French barriques over a 9 month period and further enhanced in oak over an 18 month period. To add freshness a small portion of V19 wine was added to enhance the wine. CHARACTER A fruity bouquet with blackberry and cherry fruit aromas. Using quality French oak (30% new), a wonderfully balanced wine with layers of texture and mouth fill, linger on the palate with persisting cherry flavours and with a hint of spice and pepper. A full bodied wine style with subtle, restrained oak characters. Cellaring will reward those who can wait! RELEASE DATE 20/01/20 ALCOHOL 14.5% alc/vol

2019 BACKGROUND At Simon Tolley Wines we are firm believers that great wine is made in the vineyard. To this end no stone is unturned to grow the best quality fruit we can on our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you need to select not only the right site but also the right clone to deliver the results thatyouwantto achieveinthefinishedwine.ForRosé,wehavechosenMV6.This is one of the most highly rated Pinot Noir clones and was first registered in Australia in 1974. Small berries and bunches, rarely over-crops, later ripening. This clone is noted for excellent colour, dense, full bodied wines. A versatile clone particularly for rosé but also for sparkling and table wines. HARVEST A small parcel of carefully selected Pinot Noir fruit was harvested from our Woodside Vineyard in the Adelaide Hills on the 25 th February 2019. WINEMAKING Grapes were de-stemmed in the vineyard in the cool of the night. Within 1 hour of harvest, whole berries were transferred to the press and lightly compressed. Juice. Using free run fraction only, the juice was transferred to stainless steel for cold settling for 48 hrs. After settling, the juice was racked, taking clear juice, then fermented slow & cool in stainless steel over 14 days. The juice was fermented, thenfined,filteredandbottledfresh. CHARACTER A lovely light pink colour with strawberries and musk flavours with a soft flavoursome mid palate. 100% Pinot Noir, Estate Grown RELEASE DATE: September 2019 ALCOHOL 12% alc/vol SCREW CAP Ensures freshness and longevity. SAUVIGNON BLANC / 2020

2019 BACKGROUND At Simon Tolley Wines we are firm believers that great wine is made in the vineyard. To this end no stone is unturned to grow the best quality fruit we can on our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you need to select not only the right site but also the right clone to deliver the results that you want to achieve in the finished wine. For Sauvignon Blanc, we have chosen F4V6. This is one of the most highly rated Sauvignon Blanc Clones and was first registered in Australia in 1975. The original selection was from Chateau d'Yquem in France in the 1880's and came to Australia via Wente Vineyards, California, in 1958. This clone has moderate yields, bunch size, berry size and bunch compactness and produces fruit with pronounced aromatic and citrus characters. HARVEST A small parcel of carefully selected Sauvignon Blanc fruit was hand picked from our Woodside Vineyard in the Adelaide Hills on the 26th February 2019. WINEMAKING Grapes were hand-picked in the cool of the early morning. Within 1 hour of harvesting, the grapes were transferred to the winery and lightly pressed. Minimal skin contact and using 88% free run fraction, the juice wastransferred to stainless steel for cold settling for 6 days. After settling, the juice was racked and then fermented (QA23) slowly in stainless steel tanks over 13 days. The juice was fermented to dryness then fined, filtered and bottled. CHARACTER An aromatic, fruit-driven styled wine. The palate is clean and crisp of medium weight and alcohol. Flavours are predominately gooseberry and lychees with hints of guava and pink grapefruit. The wine isrefreshing with a long lingering finish. RELEASE DATE: October 2019 ALCOHOL 14.0% alc/vol SCREW CAP Ensures freshness and longevity. SYRAH / 2017

2016 HARVEST A small area of grapes was selected from our low yielding vines grown on the higher slopes of our estate on 12th April, 2016. WINEMAKING Approximately 15% of the fruit was hand-picked and 75% machine harvested and de-stemmed in the vineyard. The de-stemmed portion of fruit was divided evenly into open fermenters over the hand-picked portion of fruit. Fermentation took place over a 14 day period and further held on skins post ferment for 14 days. After a light pressing the wine was racked to small French oak barrels with further racking from barrel (3X) and matured in oak for 18 months. Bottled October 2017. CHARACTER Mixed berry aromas of blackberry and blueberry with cool climate “Syrah” characteristics of mild spices and cherry flavours. The colour is bright with a violet hue and the palate structure is mid-weighted, with fine, soft tannins. The wine is good to drink now but will benefit and mature elegantly with further cellaring.
