2017 Estate Cabernet Merlot

Our Devils River is a blend of Cabernet Sauvignon (65%), Merlot (23%), Malbec (10%) and a small touch of Cabernet Franc (2%) which is a classic Bordeaux blend. These Varieties are all picked and fermented with the aid of wild yeast. During ferment they are pumped over three times a day to extract maximum flavour and tannin profile. It is then pressed off and racked to a mixture of barrels both old and new (40% new) and French and American oak (50/50). The resulting wines are then blended and bottled without fining or filtration to ensure the delicate flavours of the variety are preserved. *Fining agents are protein based compounds used to reduce the level of phenolics in the wine so it is vegan friendly.

Low Sulfite Wild Yeast Matured in old barrels Grown, vinified and bottled at “Rosnay” The aim is to produce a complex, earthy red, akin to a pinot, using wild yeast and ageing in very old barrels, some as old as 20 years. selectively hand picked just before the big rains of the 2017 vintage, the grapes were chilled in the cool room before crushing and gentle, slow open fermentation in small half tonne vats with no acidification, no added yeast and twice daily hand submersion of the cap. After 95% of fermentation was complete the wine was pressed off the skins directly into very old 300 litre oak hogsheads where it matured for 8 months prior to racking and bottling without fining or filtration. The wine is light to medium bodied, with fine tannins and rustic, earthy structure overlaid with savoury fruit flavours of raspberry and sour cherry. Complex, rustic, natural. Product Description

Tiny berries went into this wine - you can tell by the deep colour. The flavour comes from the skin, so the smaller the berry, the more colour and flavour. This wine is almost unique at this price point, in that it will get better over 10 years.

1000 Sundowns Cabernet Sauvignon 2017

Product Description

Named after Emma Louise's beautiful song and dedicated to my Mum & Aunt, who got to be in their husbands "arms for 1000 sundowns; it was a love worth remembering." In 2017, our Coonawarra vineyards were certified to Australian Organic standards, and no pesticides have been used on the property for over 10 years. We use natural alternatives likes flowers to attract bugs which eat our pests. Small berries like ours, express more colour and flavour and the skins natural soft tannins will naturally help this wine age well until 2029.
