2017 Garage Shiraz

Low Sulfite Wild Yeast Matured in old barrels Grown, vinified and bottled at “Rosnay” The aim is to produce a complex, earthy red, akin to a pinot, using wild yeast and ageing in very old barrels, some as old as 20 years. selectively hand picked just before the big rains of the 2017 vintage, the grapes were chilled in the cool room before crushing and gentle, slow open fermentation in small half tonne vats with no acidification, no added yeast and twice daily hand submersion of the cap. After 95% of fermentation was complete the wine was pressed off the skins directly into very old 300 litre oak hogsheads where it matured for 8 months prior to racking and bottling without fining or filtration. The wine is light to medium bodied, with fine tannins and rustic, earthy structure overlaid with savoury fruit flavours of raspberry and sour cherry. Complex, rustic, natural. Low Sulfite Classic medium bodied Chardonnay Lightly oaked Vegan Friendly Grown on upper slopes of deep red volcanic clay, Chardonnay is one of the best suited varieties to the Cowra region and is very versatile in wine style. This wine was made from quite well ripened fruit, giving it a medium body with plenty of white peach flavours, and partial malolactic fermentation to give it cremy acid balance.
