The Holm Oak 2018 Shiraz has beautiful lifted white pepper and raspberry characters on the nose. It is vibrant and intense. The palate has fine tannins, lovely fleshy palate weight and finishes with succulent acidity. This wine is drinking really well upon release, but will continue to evolve well in bottle over the next 3-5 years.

Winemaking notes
The fruit for this wine was harvested in early April when the fruit was showing lovely white pepper and raspberry characters. The fruit was fermented with an inoculated yeast in small open fermenters. The fermenters were either hand plunged or pumped over to ensure good flavour and colour extraction and vibrant fruit characters. Following fermentation, the wine was pressed to a mix of new (20%) and older oak. The wine was matured in oak for 12 months prior to bottling
